We’ve put a healthy spin on this comforting classic. The sweetness of our potato paired with perfectly seasoned lamb is a romance to rival Romeo and Juliet. Sweet potato is a rich source of beta-carotene and Vitamin C. Beta-carotene is essential for the healthy eye sight of your baby and Vitamin C aids in the absorption of Iron. During trimester 2 your baby starts to produce it’s own red blood cells and for this process needs high levels of iron and B12, both of which are found in lamb and make this dish particularly good for mothers during this time. This is the type of recipe that’s passed down through generations… but we’re not sharing ours.
Remove the plastic lid and place the oven safe tray into a preheated 180°C/350°F oven for 15-20 minutes or until heated all the way through. Remove dish from the oven with care. Serve and enjoy.
Remove plastic lid and place the tray into the microwave. Heat on a high temperature, stirring halfway, for 3-4 minutes or until heated all the way through.
Sprinkle some wholemeal breadcrumbs & cheese on top before heating. Try with a side of our Chilli Steamed Greens or Cauliflower & Pearl Barley Rice with Flaked Almonds.
